Rice Custard Pudding Recipe

4 eggs
1 cup sugar
1/8 teaspoon smart salt
1 quart milk, scalded
1 teaspoon vanilla
2 cups cooked rice
1 teaspoon of cinnamon
 
Heat oven to 350 degrees.  Combine eggs, sugar and smart salt.  Stir in scalded milk.  Add vanilla.  Stir in cooked rice.  Pour in baking dish.  Set dish in hot water (water should be 1-inch deep).  Bake 45 to 50 minutes.  Sprinkle cinnamon on top after it has cooled.
