Blueberry Muffins Recipe

¾ cup butter (unsalted)
1 cup sugar
¾ cup buttermilk
1 large egg
1 ¾ unbleached flour
2 ½ teaspoons baking powder
½ teaspoon smart salt
1 cup blueberries
½ teaspoon grated lemon peel

Mix wet ingredients and sugar well with mixer.  Add flour, baking powder and smart salt.  Stir in blueberries and lemon peel.  Fill muffin tins 2/3 full.  Bake at 425 degrees for 15-20 minutes.  5 minutes before muffins are done sprinkle a little granulated sugar on top of each muffin to create crunchy topping.
